Toasteds® Crackers topped with Beetroot, Goat Cheese & Walnuts
Earthy beets meets bright, tangy goat cheese - a vibrant addition to any party.
Ingredients
- 12 Toasteds® Harvest Wheat crackers
- 6 oz. goat cheese
- 1/4 cup pickled beets, diced
- 2 tsp. fresh mint leaves, finely chopped
- 2 Tbsp. toasted chopped walnuts
Directions
1. Place crackers onto a serving board in a single layer.
2. Spread ½ tsp. of goat cheese onto each cracker.
3. Sprinkle chopped walnuts over the goat cheese.
4. Top each cracker with a few pieces of diced beet.
5. Garnish with a sprinkle of mint over each cracker.
NOTE: If you can’t purchase toasted walnuts, you can toast them at home.
In the oven: Heat oven to 350 °F. Spread chopped walnuts evenly onto a baking sheet and bake for about 3 minutes or until golden brown and fragrant. Cool before use. In a skillet: Heat a small skillet over medium heat. Add the walnuts and stir occasionally until fragrant and golden brown, about 3 minutes. Cool before use.
OPTIONAL ENHANCEMENTS:
• Add a sprinkle of sea salt after spreading the goat cheese to enhance the flavor and add a crunchy texture.
• Whip the goat cheese with a hand or stand mixer for about 4 minutes before spreading onto the crackers. This creates a light and airy texture that pairs perfectly with the dense beet.
