Toasteds® Crackers topped with Goat Cheese, Fig & Pine Nuts
Sweet and savory flavors of sweet figs, creamy goat cheese, toasted pine nuts, and aromatic rosemary - a scrumptious snack for everyday celebrations.
Ingredients
- 12 Toasteds® Harvest Wheat crackers
- 6 oz. goat cheese
- 3 fresh mission figs, quartered
- 2 Tbsp. pine nuts, toasted and chopped
- 1 Tbsp. rosemary, chopped
Directions
1. Place crackers onto a serving board in a single layer.
2. Spread ½ tsp. of goat cheese on top of each cracker.
3. Place a fig quarter on top of goat cheese.
4. Sprinkle pine nuts and rosemary over each cracker.
NOTE: Pine nuts can be toasted in the oven or in a skillet.
In the oven: Heat oven to 350 °F. Spread whole pine nuts evenly onto a baking sheet and bake for about 3 minutes or until golden brown and fragrant. Cool before use.
In a skillet: Heat a small skillet over medium heat. Add the whole pine nuts and stir occasionally until fragrant and golden brown, about 3 minutes. Cool before use.
OPTIONAL ENHANCEMENTS:
• Add some more flavor by swapping out the goat cheese for herb goat cheese.
• Introduce some more flavor complexity by adding a drizzle of balsamic glaze or reduced balsamic before adding the pine nuts and rosemary.
