Toasteds® Crackers topped with Ricotta & Sun-dried Tomatoes

The classic combination of creamy ricotta and tangy sun-dried tomatoes all in one tasty bite - an easy party favorite.

Ingredients

  • 12 Toasteds® Rosemary & Olive Oil crackers
  • ½ cup ricotta
  • ¼ tsp. salt
  • 4 oz. sun-dried tomatoes
  • 1 Tbsp. fresh basil, chopped
  • 1 Tbsp. lemon zest

Directions

1. Place crackers onto a serving board in a single layer.

2. Spread 1 tsp. of ricotta onto each cracker.

3. Sprinkle some salt over each cracker.

4. Separate 12 pieces of sun-dried tomatoes and place one on each cracker.

5. Garnish with a sprinkle of basil and lemon zest over each cracker.

NOTE: If using sun-dried tomatoes in oil, strain from oil before use.

OPTIONAL ENHANCEMENTS:

• Add some pitted and sliced Castelvetrano olives to enhance the savory flavors in these bites.
